Thanks, sounds good and as soon as I get back from my upcoming holiday, I will definitely try this out and let you know how we liked it. This sounds pretty seamless and we love keeping it simple. Maybe when your reaching out to Chef Doug, he will offer some advice on what side dishes would be taste to have with it.
Hi, great question, a lot of people are turned away from fish because of the smell!! To start with, unless you live in a fishing town where you can get your fish fresh of the boat, then I recommend buying it frozen. "Fresh fish" in the store is not really fresh, it still takes at least 24 hours to get it from the boat, to the plane or truck and into the store. Some are even previously frozen fish that is thawed. And then by the time its sold and cooked its usually a couple of days old. So it will smell. On the other hand frozen fish is captured and frozen right away, you can thaw it by placing it in the fridge the morning you want to cook it. It wont have the fish smell. Never thaw it with warm water.
For cooking, simplest form is to put a little olive oil, some sea salt and pepper (you can also get seafood seasoning, this is one of the ones I use). Whole Foods also has some great seasonings.
For a fancier sauce I use;
half ginger sliced,
1/4 cup soy sauce
1 tbs mayo (unhealthy I know, but its so little)
1 tsp Dijon mustard
blend them together.
I marinate the fish with the sauce.
Put in a oven proof pan or dish and cook at 425 for 15-30 minutes (depending on how raw or cooked you want it). You can also sear it on the stove or put in on the BBQ (great with Salmon Fillet). Make sure the fire is not too hot. If using charcoal either very little or indirect heat. Always skin side down.

Try the same thing with Tuna! Great on top of a salad or with some quinoa. Can keep some of the sauce from the pan for seasoning.

I was wondering about your suggestion for cooking Salman. My husband and I are not big fish eaters, except the unhealthy fried kind. We definitely don’t want anything that taste fishy! What would you suggest for a beginner try to learn all over again?
